Salumi


Salumi are Italian cured meat products and predominantly made from pork. It comes from the italian word salume, pl. salumi, coming from the latin word salumen, that means salty meat. The term salumi also encompasses bresaola, which is made from beef, and also cooked products such as mortadella and prosciutto cotto. The word salumi is not a misspelling or variant of salami (from the italian word: salume, pl. salumi). Salami is a specific type of salumi.


Well here you go… the world of Salumi is wide open and growing in so many traditional ways! At Campo we will be featuring a wide array of products. You will be able to watch us butcher the animal in the window from Sierra Street and then fabricate into casings and hang in the cabinet we imported from Italy. This is full circle eating. There will be some many recipes to explore and new tastes for us all. We are so excited to embark on the journey. It will be a major learning process for us in the kitchen, but we believe that you, the customer will benefit from our labor of love!

    Handcrafted Salty Pig Parts have made there way to Reno!!! To those that don’t know, this is a dying art, and I am really happy to see that our community will be part of the revival.

    Any plans to do these products in a take home format, ala Boccalone in SF? The regular patrons of Ole Bridge would love a little Salumeria window out front! I know I’d go out of my way if I was downtown.

    NOBODY KNOWS PIZZA LIKE I DO. WHEN I LIVED IN NAPLES IN THE 50′S I WOULD BE EATING IN THE TRATTORIES DOWN TOWN DAILY. THEY ALL USED THE BRICK OVENS. BUT THEY ALL USED SAWDUST AGAINST THE WLLS, NEVER ANY LARGE PIECES OF WOOD. SO YOUR PICTURE OF THE PIZZA COOKING IN YOUR BRICK OVEN ” SUCKS”. THE EDGE OF THE PIE WILL BUBBLE UP, NEVER STAY FLAT LIKE A PANCAKE. I’M PROBABLE GOING TO HAVE TO COME CHECK YOU OUT.
