Whole Hog

I will not go on and on about the many awesome reasons that it is the right thing to do by eating whole hog. The best way to see if it resonates for you is to watch the video blog of me pulling a pork tenderloin out of a half hog. This 100% Berkshire animal from Stone Valley Farms is a gorgeous beast. The tenderloin only weighs about 2 pounds. What we do with the remaining 110 pounds is what we love to do at Campo.
